The pursuit of excellence guides every stage of our olive oil production. We cultivate our land using sustainable and organic practices, working in harmony with the environment, preserving soil fertility and reducing our ecological footprint. We select the finest olives from native varieties grown exclusively on our land, at the very moment when their aromatic and nutritional potential is at its peak. Milling takes place within four hours of harvesting in a state-of-the-art, temperature-controlled mill, with a short kneading process to preserve the high levels of polyphenols that give our extra virgin olive oils their nutraceutical properties. Each extraction is followed by careful filtration to remove any residues that could compromise the product’s quality over time, and the resulting extra virgin olive oil is stored in stainless steel tanks. Our team comprises oil tasters recognised by the Puglia Region to ensure a product of the highest quality.
